When it comes time for the main course, you can try one of their more traditional items, such as Maine Lobster and Dover Sole, with Yukon potato mouselline, braised leeks, and North Sea grey shrimp in a sherry foam, roasted pheasant breast with confit of pheasant leg, winter vegetable ragout, and provencale potatoes in a rosemary reduction, beef tenderloin or rack of lamb, or you can try one of their more original dishes, like their boar tenderloin, served with foie gras, in a star anis demi glace, served with Washington apple chips. For desert, go for their Grand Mariner souffle with orange almond creme fresh, or the Vahlrona chocolate tart with brown sugar ice cream.
